Cupcake recipe for 12

Ingredients:

  • 240g plain flour
  • 120g salted butter
  • 2 large eggs
  • 240ml whole milk
  • 200g caster sugar
  • 1 tsp baking flour
  • 1 tsp vanilla extract

Recipe:

Pre heat your oven to 180C. In a bowl, crumble the butter with the sugar, the flour and baking powder using your hands. In a separate bowl, mix the milk, eggs and vanilla extract. Add this mix to the first bowl. Add paper cups to 12 muffin tins and fill so they’re ¾ of the way full. Bake for 16 minutes.

Cream cheese icing

Ingredients:

  • 225g cream cheese
  • 115g salted butter, at room temperature
  • 350g icing sugar
  • 1 tsp vanilla extract

Recipe:

In the bowl of an electric mixer, whip the butter well before adding half of the icing sugar. Next, add the cream cheese, vanilla extract and the rest of the icing sugar. Use a spatula to ice the cupcakes.
